Originally made in the 11th century by monks and used as a medicine, gin became popular in the UK in the 17th century when import restrictions were placed on French brandy.

At one time, over half the 15,000 drinking establishments in London were gin shops (or ‘gin palaces’) and when the government introduced high gin taxes in 1736, there were riots in the streets. Gin was used in the British colonies to mask the bitter taste of the anti-malarial quinine which was dissolved in carbonated water to become ‘tonic water’.

Gin fizz: gin, lemon juice and sugar, shaken with ice, topped with carbonated water

Negroni: one part gin, one part vermouth rosso, one part Campari, garnished with orange peel (stirred not shaken!)

Pink Gin: gin and angostura bitters with a lemon rind garnish

Singapore Sling: officially - gin, cherry brandy, Cointreau, Benedictine, Grenadine, pineapple juice, lime juice, Angostura bitter.
