BORDER SUN SPARKLING APPLE WINE

Made from a blend of five heritage apple varieties matured in the family orchard.  Border Sun is crafted over 2 years, to deliver the perfect blend of full bodied and balanced apple flavour, brought to life by just the right amount of acidity and effervescence. Subtly fortified with local apple brandy.

Border Sun is created using the ‘methode traditionelle’ made so famous in the champagne houses of France.  After harvesting and pressing, the apple juice is fermented to create a very dry apple wine.  This wine is then put into individual bottles,  ‘primed’ and laid down to achieve secondary fermentation which adds the distinctive fizz. Fifteen months later the bottles are ‘degorged’ to ensure crystal like clarity and a ‘dosage’ of sugar and local apple brandy is added to give Border Sun its unique, complex and long lasting flavour.

Border Sun, with just 10% ABV, makes a perfect ‘aperitif’, but its depth and complexity also make it a great accompaniment to all foods, but most especially pork dishes, charcuterie and cheese. It can also be used as a replacement for sparkling wine in any of your favourite summer and winter cocktails.

The Munn family has a long history in Herefordshire cider making. In the nineteenth century the Munn’s Red cider apple was recorded in Canon Pyon, and while the apple is also noted in the Herefordshire Pomona, we have been unable to locate any existing trees. In 2012 the family began the transformation of south-facing,  four acre site on the England-Wales border and planted some two hundred heritage apple varieties in a traditional open orchard.
