Cavit have produced this fine Blanc de Noirs Trento DOC in tiny volumes for a few years but this year they actually had enough for an Autumn parcel. Made from 100% Pinot Noir grapes, grown on the steep Cembra Valley slopes in Trentino with 36 months ageing on lees. Entry Champagne pricing but with so much more to offer. Straw yellow, minimum dosage, with hints of redcurrant and stone fruit. Delicious depth, structure and complexity with a prolonged brioche, biscuity, nutty finish. Worthy of a slot in a Christmas Day line up.
