Georgians proudly boast that winemaking all began in their country, 8,000 years ago. This wine is made in the way wines have always been made there: in a 2,000 litre clay pot, dug into the ground, where skins, pips and all are left to mature slowly over winter before bottling. The grape is Saperavi, which, unusually is a red-juice variety. But despite this primitive-sounding production method, the wine has some rich, sophisticated charm, and lots of ripe black-fruit flavours.
