Black Mountain's borage honey is proudly produced for them by Chris Manton from Elm Tree Bees in Worcestershire, England. Soft Set honey is different from runny honey as it has been seeded with a fine grained, crystallised honey. The fine grain of the seed honey interacts with sugar molecules within the honey to result incredibly smooth and fine textured honey, that melts in the mouth. It's the only honey on their website that isnt produced in Wales and this is because fields in Wales tend to be dedicated to farming livestock as opposed to arable crops, such as borage. However, after tasting this honey, they couldn't resist stocking it as its quality shines through and the taste is like nothing else! Chris is based in Worcestershire and manages over 1200 colonies of bees. He is a greatly experienced beekeeper and takes over 200 colonies every year to fields of borage to produce this exceptionally light and fragrant honey. The honey is cold extracted, filtered and unpasteurised to allow the final product to retain all of the vital micronutrients that are present when the honey is extracted from the hive. It is extracted in small batches and the colour of this honey will vary in tune with the changing seasons and flowers our bees feed on but predominantly will be a pale, light colour. Bees are taken to hundreds of acres of borage to forage on beautiful, blue forage flowers.
